In the latest installment of our Employee Spotlight, Jessica Plummer explains her desire to be president for a day, the joys of processing an elk, and her love of nature photography.

What is the coolest thing you’re working on right now? The coolest thing I am working on… is not work related. My husband shot an elk last week and we processed it ourselves, so figuring out how to butcher a large animal, make elk burger, steak, breakfast sausage, summer sausage and jerky has been a fun challenge and is pretty cool. I mean, how many people can say they’re doing that!?!
If you could visit anywhere in the world right now, where would you go? Greece. My husband and I went there eight years ago on a trip to Switzerland, Italy, and Greece and I feel like we didn’t get to spend enough time there. We want to go back.
What is the best concert you’ve ever attended? The Goo Goo Dolls. It was a small venue in Hampton Beach, New Hampshire. It was pretty much a large bar with standing room only, so there were no bad seats in the house. The band played for hours with encore after encore and instrumentals in between songs. You forget how many of their songs you actually know since they’ve been around for decades!
Do you have any hidden talents? I don’t think so… if I had a talent, I wouldn’t keep it hidden!
Who would you most like to switch places with for a day (this can be a celebrity, family member, animal, coworker, anybody you wish)? POTUS. I’ve been watching the news quite a bit lately and also binge watching House of Cards and Scandal on Netflix, so it would be interesting to get a glimpse of a day in the life of the U.S. President. Drama, security, politics… I’m sure one day would probably be enough!
What is your go-to karaoke song? Oh my gosh I am so bad at Karaoke… I butcher the lyrics of songs all the time. I’d probably pick some Britney Spears song since the lyrics are simple, catchy, and repetitive.
If you could only eat one thing for the rest of your life, what would you choose? Ice Cream. Definitely ice cream.
What is your all-time favorite movie? I don’t have an all-time favorite… But I love musicals and movies with great soundtracks. Favorites that come to mind are Rent, The Bodyguard, Pitch Perfect, Frozen and Trolls. I’m sure there are more, but I have watched all of these multiple times…probably because I can’t sing (hence my self-admitted inability to do karaoke) so I appreciate them all that much more!
How do you typically spend your free time? Hiking outside, playing ice hockey, or taking photos. I really enjoy nature photography.
